Feels like I just did this recently, but I have an updated layout.
Changes:
1. Added Cale's Rail shed and house (shown in white)
2. Moved Elroy's town buildings back to the brick built road area of the layout.
3. Moved Dave E's Peeron Library across from Linda's triple deckers and next to Joe's cemetery
4. Gave the empty 32x48 by Dave's skyscrapers to Dave to build something.
4. Moved Elroy's rail shed to the East Rail yard
5. Added Elroy's coaling station to the East Rail yard
6. Rearranged the track in the East Rail yard
7. Moved Chris's Rail shed
8. Moved Joe's crane and added Elroy's blue office next to it.
9. Added the Penwakee(?) Layout
10. Added a table area for Jamie's discussion.

That's a large space to fill and it doesn't sound like we have enough Western MOCs to fill it. It sounds like Brickmaniac508 could build something for this space, but I'm not comfortable giving that large a space to one person. What if he doesn't show for some reason outside of his control.
I'm still hoping Dave and Suz E will be able to come up with something for the space. If not my Wife was thinking of making it a mini golf area that others could build holes for.

Jon, I could help with the mini golf MOCs by making a lighthouse, bridges, windmills, etc. I can make my MOCs so that they can be placed almost anywhere on the
mini golf layout. Not just in one specific place.
If the layout near the Civil War battlefield contains any tan baseplates, I could bring some Wild West MOCs just in case the area is open. If not, I can just bring them home. By "some" I mean about 10 MOCs that each fill a 16x32 baseplate or a 16x16 one. Elroy could contribute to that if he wants to. Maybe we could split that layout into two sections. Wild West, and mini golf.
My drummer could also be included in any train station.

Dave and Suz posted last night that they are working on building a farm for the empty 64 x 192 stud space.

I still toying with the idea of a mini-golf course. Let me see if I can come up with a standard hole size (maybe a 16x16 baseplate) so we can each build a few holes.

Could be interesting to add a Wild West area to the layout. We do have some trains from that era. I review the layout and see if there is a spot to put them.
I'm assuming your Wild West MOCs are custom and not sets. I ask, because we usually try to stay away from sets so there is more room to show case custom designs.
Do you have any photos?

Happy 4th of July Jon!
I have been working non stop for the past few days and managed to get the pictures of my Wild West MOCs on Brickshelf along with some other things. Just copy and paste the links if you want to see the pictures.
Please note that the green baseplate that the Wild West MOCs are displayed on IS NOT PART OF THE MOC. I intend for all of my Wild West MOCs to be on TAN baseplates. Please notify me if you have any tan baseplates available for the show.
Wild West MOCs (Storm Cloud Range)
Entrance to Storm Cloud Range
This MOC can be set up at the edge of the town. It includes 2 Union soldiers and has a sign that says "Welcome to Storm Cloud Range". And to finish it off, I've added a bush and a snake to go outside the building. The MOC fits on a 16x32 baseplate.

Covered Wagon
I can put this creation anywhere on the Wild West layout. It has one horse, a lantern, and some supplies. The minifig has a whip, a bow tie, and a stovepipe hat. Just the kind of guy you would see in a western town.

Old Man Higgenbottom's Wagon
This can also be set up anywhere. (I think it should be away from town.) It includes one hermit with his trusty hound and a lantern on a stick. The wagon carries a rifle, a frying pan, a pickax, and a shovel. I think the hermit turned out great!

Storm Cloud Range Saloon
This fits on a 16x32 baseplate, and includes quite a few minifigs. It has a sign that says "Storm Cloud Range Saloon". I used a great technique in order to for the pillars to support the roof. In the back, we can see a bandit coaxing some money out of an innocent bystander. While in the front, we see a drunk cowboy and a sleeping person with his hat covering most of his face. It can be set up in the middle of the town. (Since that's where most saloons are.)

Thank you Jon, eight sounds like enough but you may need to bring a couple more (maybe about two to four more) because I have some more MOCs that I am going to bring. This can be put on a 16x32 baseplate and rearranged in almost any order. It can be set up
away from town but still relatively close. It includes a tree, a run down barn/shack, three graves, two crates with bodies, and two figures.

The Wastelands
When you said that you weren't that comfterable giving that much space to one person, I
thought of a way where I could take up a good amount of space with one small MOC that still would look great on the layout. These simple creations can be put anywhere on the layout and can be placed in any order. It includes three slightly modified BURPs and a cattle skull (got the idea from another creation), a snake, a horse skeleton, and a coyote.
